Blueberry Chai Oat Bake [serves 1]
- 6T GF oat flour
- 3T milk
- 1/2 banana
- 1/3c blueberries
- 1 large egg
- 1/2t vanilla
- 1t chai spice
- In a bowl, mash the banana until smooth and then whisk in the egg, milk + vanilla.
- Add the oat flour + chai spice until just combined, then stir in the blueberries.
- Pour into a lightly greased microwave safe bowl + microwave for about 1.5-2min.
- Remove from the bowl + top.
tips/substitutions: Buckwheat flour will also work for this. If you don’t want to use banana, sub 2.5T applesauce. If you make in 2 ramekin dishes, they will take 30sec – 1min longer to cook.
